Ingredients
1 (16 ounce) can low fat refried beans, or 15 ounces can no salt added pinto beans, (about 1 ½ cups)
6 tablespoons salsa
2 tablespoons chopped fresh cilantro
2 tablespoons minced scallion or onion
6 (8 inch) whole wheat tortillas
¾ cup reduced fat cheddar cheese, grated
PREPARATION
- Combine the refried beans, salsa, cilantro and scallions in a bowl and mix well.
- Place one tortilla on the pan. Sprinkle 1 tablespoon of cheese over half the surface of the tortilla. Spoon ¼ cup of the beans mixture over the area with the cheese, and then sprinkle 1-tablespoon cheese on top of the bean mixture. Fold tortilla over pressing together with the back of a spatula, and cook over medium heat for 1-2 minutes on each side or until cheese is melted and each side is brown.
- Repeat with the rest of the ingredients. Cut each quesadilla in half and serve warm.
Optional: garnish with avocado and your favorite salsa.
