Ingredients
2 tablespoons red wine vinegar
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon black pepper
1 medium cucumber, sliced (about 2 cups)
¼ small red onion, chopped (about 3 tablespoons)

PREPARATION

  1. In a large bowl, whisk together the red wine vinegar, olive oil, salt, and black pepper.
  2. Add sliced cucumber and chopped onion; toss until thoroughly coated.
