  1 cup green or red Swiss Chard, stemmed and finely chopped
              1 garlic clove
              ¼ teaspoon salt
              1 cup low-fat Greek yogurt
              1 tablespoon olive oil
              1 tablespoon fresh lemon juice
          
PREPARATION
- Prepare an ice bath by adding ice and cold water to a large bowl.
 - Bring a large saucepan of water to a boil.
 - Add Swiss chard and cook until just tender, about 3-5 minutes. Drain water.
 - Immediately submerge chard in ice bath to stop the cooking. Drain water.
 - Grind the garlic and salt into a paste using a mortar and pestle (can use the bottom of a coffee cup and a cutting board to grind).
 - Combine chard, yogurt, garlic paste, oil, and lemon juice in a medium size bowl.
 - Refrigerate and serve cold with toasted whole wheat pitas.
