Summer Succotash Salad

Ingredients
1 tablespoon olive oil
Juice of 1 lemon (about 2 tablespoons)
1 teaspoon honey
½ red onion (small), minced
14.5 ounce can green beans, no salt
15 ounce can corn, no salt
½ pound frozen baby lima beans, thawed (about 2 cups)
2 tablespoons chopped fresh basil (optional)

PREPARATION

  1. Stir oil, lemon juice, honey, red onion, salt and pepper together in a small bowl.
  2. Drain green beans and corn and place in a medium bowl and add lima beans.
  3. Toss vegetables with dressing to coat evenly. Stir in basil (optional) and serve.
