Ingredients
1 pound dried red beans
1/2 pound turkey sausage, thinly sliced
3 celery ribs, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
7 cups water
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon chili powder
Toppings
Green onions, chopped for garnish
Fresh parsley, chopped for garnish
PREPARATION
- Check beans for rocks and rinse thoroughly.
- Add rinsed beans to slow cooker, along with turkey sausage, celery, bell pepper, onion, garlic, water, Worcestershire sauce, salt and chili powder.
- Set slow cooker on high setting and cook for 6 hours.
- Serve red beans on top of cooked rice. Top with green onions and parsley.
For Stovetop preparation:
Heat 1 tablespoon olive oil, sauté onions for 3-5 minutes, add garlic, celery, bell pepper and sauté for another 5 minutes. Add spices and cook for an addition minute. Add water and beans and simmer with tilted lid until beans are tender, about an hour.
