Ingredients
1 lb. whole wheat rotini pasta
10 oz. canned chicken
¼ cup red onion, chopped (half an onion)
2 cloves garlic, minced
2 cups cremini mushrooms, sliced
½ cup fresh basil
1 Tbsp. extra virgin olive oil
1 cup chopped spinach, canned or frozen (defrosted)
1 ½ cup low sodium chicken stock
½ cup parmesan cheese, grated
PREPARATION
- Cook pasta according to package directions. While the pasta is cooking, heat the oil in a large, non-stick frying pan.
- Sauté onions, garlic, and mushrooms on medium-high heat for 5 minutes or until onions are translucent.
- Add the chicken, spinach and stock and mix together. Allow for the ingredients to simmer until sauce thickens about 2-3 minutes.
- Add in the cooked pasta and cheese. Mix well.
- Garnish with basil and serve.
