PINEAPPLE BEET SMOOTHIE

Ingredients
½ cup Greek yogurt
1 frozen ripe banana
½ cup cooked beets, chopped into wedges
1 cup chopped pineapple
1 ½ cup unsweetened soy milk

PREPARATION

  1. Layer ingredients in blender in the order listed. Pulse together until combined, adding more milk if necessary. Blend on high until smooth and creamy.

 

How to Prep & Cook Beets: Trim greens and root end.

  • To cook on the stovetop: Place water and beets in a large pot. Cover and boil over high heat until tender. Peel beets with hands (wear gloves if you can because they will turn your hands pink!) or vegetable peeler.
  • To cook in the microwave: Place in a glass baking dish, add water, and microwave on high for 8-10 minutes or until tender. Peel beets with hands (wear gloves if you can because they will turn your hands pink!) or vegetable peeler.
