Mexican Picadillo

Ingredients
1 lb. lean ground beef
2 white medium potatoes, chopped
1 cup canned carrots, rinsed and drained
1 cup canned green peas, rinsed and drained
1 cup vegetable broth
1 bay leaf
1 tsp cumin to season ground beef
1-15 oz. can diced tomatoes, low sodium
½ tsp black pepper

PREPARATION

  1. Season ground beef with cumin and mix well. .
  2. Heat 2 tbsp. cooking oil in a large frying pan over medium-high heat. Add ground beef to the pan cook until lightly brown (about 5 min)
  3. Stir in the potatoes and cook for 3 minutes. Add the peas and carrots and cook for 3 more minutes.
  4. Add the diced tomatoes, vegetable  broth, and black pepper, and mix well
  5. Add bay leaf on top and reduce the heat to medium-low and cook for 20 minutes
  6. Taste the picadillo and serve!
