Ingredients
1 medium ripe banana
2 eggs
3 tablespoons 100% whole-wheat flour
1 tablespoon low-fat milk
Non-stick cooking spray
¼ cup strawberries, chopped
Toppings
Optional toppings: 2 tablespoons sugar free whipped topping, or maple syrup
PREPARATION
- In a medium bowl, mash the banana with a fork until no large lumps remain.
- Crack the eggs, pour the milk into the bowl, whisk with fork until well combined, and add flour mix well.
- On medium heat, lightly coat a large nonstick pan with cooking spray.
- Once the pan is hot, add 1 large tablespoon of batter onto the pan. Cook each pancake for 2-3 minutes or until pancakes slightly puff up and are golden brown underneath.
- Remove from heat and arrange pancakes on a plate top with strawberries and your favorite toppings.
