Ingredients
1 lb. fresh okra, trimmed & sliced
1 egg
¼ cup low-fat milk or low-fat buttermilk
1 teaspoon hot sauce (optional)
1 cup cornmeal
½ teaspoon paprika
¼ teaspoon salt
½ teaspoon black pepper
2 seconds cooking spray
DIPPING SAUCE
- 1/3 cup non-fat mayonnaise
- 1-2 green onions, chopped
- 2 teaspoons lemon juice
- Salt & pepper to taste
PREPARATION
- Preheat oven to 425°F. Whisk together egg, buttermilk, and hot sauce in a medium bowl. Add okra and stir to coat well.
- Combine cornmeal, paprika, salt and pepper in a large bowl. Add wet okra 5-6 at a time and toss to coat well.
- Spray a baking sheet for 1 second with cooking spray. Add coated okra in one layer on the baking sheet and spray again for 1 second with cooking spray.
- Bake 30-45 minutes until golden brown.
