Ingredients
2-1/2 cups skim milk
Pinch of salt
2 cups quick-cooking rolled oats
½ teaspoon vanilla extract
¼ cup agave nectar or honey
1 teaspoon lemon zest
1 cup fresh or frozen blueberries, thawed
¼ cup reduced-fat cream cheese, at room temperature
¼ cup nonfat Greek yogurt
2 squares (or 1 rectangle) cinnamon-flavored graham crackers, crushed
PREPARATION
- Pour milk into a medium saucepan over medium heat. Add salt and bring to a boil. (Whisk often so the milk does not stick to the bottom of the pan.)
- Add in the oats, vanilla, agave nectar, lemon zest, blueberries and cream cheese. Lower the heat to a simmer and cook until oatmeal has thickened(about 3-4 minute), stirring continuously.
- Remove oatmeal from the heat and stir in the yogurt (or you can add dollops on top after dishing up the oatmeal into bowls). Scatter crushed graham crackers over the top.
